Good Ol’ Summer Strawberry Cobbler

nothin’ says summer like a straight-up strawberry cobbler. Paired with a scoop of cold and creamy vanilla ice-cream? *chef’s kiss* This dessert has all the flavours of a funnel cake, and that’s pretty great, it’s also super easy to make, and comes together in a pinch (also, pretty great).

Cook Time: 30 minutes 

Total Time: 1 hour

Serves: 6


Crumble Topping:

1 cup all-purpose flour 

1 cup old-fashioned oats 

1/4 cup granulated sugar 

1/2 tsp salt 

1/2 cup chilled, cubed butter


Strawberry Filling:

4 cups chopped fresh strawberries 

3/4 cup granulated sugar 

2 tbsp fresh lemon juice

1 tsp lemon zest 

4 tsp all-purpose flour 


Vanilla ice cream, for serving


Directions

1.Preheat oven to 400°F. Lightly grease an 8-inch round or square glass baking dish; set aside.

2.Crumble Topping: Add flour, oats, sugar, and salt to large mixing bowl. Add butter and work into the falour mixture, using your fingertips to make pea-sized lil nuggets of crumble topping. (Tip: If it’s been hot and spicy in the kitchen, pop your crumble into the freezer for 15 minutes, or until the butter has firmed back up) 

3.Strawberry Filling: Toss strawberries with sugar, lemon juze, lemon zest, and flour until evenly coated. Transfer to prepared baking dish and place onto baking sheet (this will catch any drippings and save your oven, should your filling bubble up a touch too much).

4.Sprinkle crumble topping evenly over the strawberry filling. 

5.Bake for 25 to 30 minutes, or until topping is golden brown and sides are bubbling with sweet strawberry juices.

6.Let cool slightly, then serve with a honkin’ dollop of vanilla bean ice cream.


Tip: it’s super easy to modify this recipe - want to use fresh cherries over the summer season? Swap out some strawberries and add pitted cherries! You can top it with whatever ice cream you want, or whipped cream, or even greek yogurt.
